A traditional sake brewery is guided by its Master Brewer who crafts the sake with refined sensitivity. Using all five senses to their fullest, the Master Brewer monitors the texture and aroma of the Koji, the sounds and the carbon dioxide levels emitted from the Moromi, to brew the perfect sake. Using the senses that everyone is born with, the Master Brewers learn and develop their skills over the years, guided by previous generations, ensuring an unbroken tradition of sophisticated sake brewing.
The Birthplace of Sake:
Shimane Prefecture.
It is said that the birthplace of Japanese sake is in the Izumo area in Shimane Prefecture. ‘Yashiorino Sake’, believed to be the first sake made in Japan, is mentioned in Izumo Mythology in Kojiki, the oldest existing Japanese historical document. Sake brewing was documented in ‘Izumonokuni-hudoki’, written in the 8th Century. From time immemorial, the Izumo region has been known for its advanced brewing techniques.

The Tanabe Takeshita Brewery sits in the most beautiful natural landscape and it works hard to preserve the production traditions that has made it so special. Even the name of its sake, Rihachi, contains a nod to its traditions; Rihachi being the name of the person who first made the sake 150 years ago.
However, what is considered delicious can change depending on the era and the people living in it. What was delicious 50 years ago, what is delicious now and what will be delicious 50 years from now can all be different. Therefore, the sake brewing at Tanabe Takeshita Brewery is always evolving. We believe that maintaining this attitude is helping preserve tradition.
